West Bend, WI – The sign for The Shoppe Custard & Grill goes up Monday as the old Toucan Custard takes on a new life at 600 N. Main Street in West Bend, Wi. The new store is a partnership between owner Yomi Verdin, the Chill Executive Officer, and Dave Pawelek, the VP of Chill & Grill.

Some of the updates include:

  • A new menu that features a build-your-own burger, gyros, chicken tenders, or a grown-up grilled cheese with pulled pork. Click HERE to view the menu.
  • Leon’s Custard will be featured along with Specialty Sundaes like peanut butter fudge Oreo and s’mores. Don’t forget to ask about sherbet and sorbet.
  • The outdoor pole and rooftop signs are scheduled for installation on Monday.
  • The new logo, painted by Milwaukee artist Michael Cerda (@cerdasignco), is a focal point of the freshened interior dining space. Cerda included some recognizable local landmarks in the new wall mural. What can you identify from the image below?

It was the end of February 2025 when we brought you the latest update from the locally owned custard shop. Verdin purchased the business in January 2025 and was then handed a one-two punch. There were hurdles transferring the social media/marketing so a rebrand took place and then in February an unexpected water main break put a pause on employee training as repairs were needed.
Neighbors familiar with the old Toucan Custard will recognize the burnt orange tile floor is making a return and Verdin said, “While the space is incredibly clean, it’s not quite how we envisioned launching our rebrand. That said, we’re adapting, trusting God, and moving forward with as much grace as possible.”
Verdin credits her family, faith, and the shop’s amazing team for their help in getting the store ready to open.On that note Verdin said, “We’re taking the next few weeks to find our rhythm again, with the goal of being at our best in April.
